<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"haggis\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4108-blog.jpg\" \/><\/p>\n<p>I&#8217;ve heard haggis described as &#8220;a sheep, turned inside out&#8221;.&nbsp;<br \/>\nTraditionally consisting of all the bits of a sheep you weren&#8217;t going<br \/>\nto serve up in recognizable form (the &#8220;offal&#8221;) made into a sausage and<br \/>\ncooked in the<br \/>\nsheep&#8217;s stomach.&nbsp; Well, you asked.&nbsp;&nbsp;&nbsp; And before<br \/>\nyou get disgusted, set<br \/>\ndown that forkful of breakfast sausage you have in hand, and give it a<br \/>\ngood, hard think:&nbsp; its ingredients aren&#8217;t a lot different.<\/p>\n<p>Anyway, I&#8217;ve enjoyed haggis from and in Scotland.&nbsp; Sadly, it&#8217;s not<br \/>\nthe sort of thing that is easily importable, anywhere, labeled as<br \/>\nfood.&nbsp; As I&#8217;ve only ever managed to get to Scotland once, it<br \/>\noccurred to me that the only way to get a haggis fix would be to figure<br \/>\nout how to make it myself&#8230;&nbsp; though I drew the line at having to<br \/>\ncook it in a sheep&#8217;s stomach.<\/p>\n<p>Pictured above is Haggis the Second.&nbsp; Haggis the First was<br \/>\npleasant, but really more of a&nbsp; lamb hash &#8212; made with ground lamb<br \/>\nand rolled oats, it tasted far more of, well, lamb than my recollection<br \/>\nof something slightly chewy, spicy, and oaty.&nbsp; I decided I needed<br \/>\nto tackle the oat problem, as well as introduce some of the more<br \/>\n&#8220;intense&#8221; bits of meat (offal).<\/p>\n<p>First up, the oats.&nbsp; And, here&#8217;s a visual aid:<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"oats\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4095-blog.jpg\" \/><\/p>\n<p>\nClockwise, from the<span style=\"font-style: italic;\"> <\/span>top<br \/>\nleft:&nbsp; <\/p>\n<ul>\n<li><span style=\"font-style: italic;\">old fashioned rolled oats<\/span>,<br \/>\nmade from oats that have been parcooked and pressed through rollers<\/li>\n<li><span style=\"font-style: italic;\">Irish, or steel-cut oatmeal<\/span>,<br \/>\noats that have been literally sliced into pieces<\/li>\n<li><span style=\"font-style: italic;\">Scottish oatmeal<\/span>,<br \/>\nstone-ground oats<\/li>\n<li><span style=\"font-style: italic;\">Quick-cooking rolled oats<\/span>,<br \/>\nsame as old fashioned, but flaked into smaller pieces<\/li>\n<\/ul>\n<p>Naturally, I decided I&#8217;d better go Scottish for this application.&nbsp;<br \/>\nUnfortunately, I didn&#8217;t have any in the cupboard.&nbsp; Wasn&#8217;t really<br \/>\nsure where to find them around here, either.&nbsp; So, I took the<br \/>\nsimple route, and ordered online from the<br \/>\nMegaOnlineEmporium.&nbsp;&nbsp; I was only mildly put off by the fact<br \/>\nthat I had to purchase 4 20oz packages (5lbs).&nbsp; Then there was an<br \/>\nunfortunate collision betweent their choice of CutRateShipper and some<br \/>\nbad weather in our area, which lead to me exercising my Angry Customer<br \/>\nRights when the 2-day delivery still hadn&#8217;t shown after 5 days, and<br \/>\nanother box was sent (free of charge, overnight, free of charge, with<br \/>\nReputableShipper).&nbsp; Never mind that there was more weather &#8212; the<br \/>\nsecond box was on my doorstep the next day.&nbsp; And a few days later<br \/>\n(making it a week late), the first box.&nbsp; &#8220;Sorry, no returns on<br \/>\ngrocery items&#8221;.&nbsp; I had 10lbs of Scottish oatmeal (in convenient<br \/>\nstore display boxes):<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"a lot of oatmeal\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4093-blog.jpg\" \/><\/p>\n<p>For reference, that is enough for Haggis the 2nd through 16th.<\/p>\n<p>Moving on.&nbsp; To get that nutty flavour, I toasted the 2 cups of<br \/>\noats:<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"toasted oats\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4099-blog.jpg\" \/><\/p>\n<p>\nAnd then the trick was to get the proper meat texture.&nbsp; Apart from<br \/>\nthe 1lb of ground lamb pictured above (beside the toasted oats), I<br \/>\nboiled 1\/2 lb beef liver and 1\/2 lb beef heart, with onions.&nbsp; That<br \/>\nessentially cooked the meats, and made a broth.<\/p>\n<p>Offal about to be chopped &#8212; <\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"parboiled offal\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4097-blog.jpg\" \/><\/p>\n<p>\nMixed all together with ground lamb, toasted oats, spices, and ready to<br \/>\ngo (cheesecloth, not sheep stomach):<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"raw haggis\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4104-blog.jpg\" \/><\/p>\n<p>\nA couple of hours of steaming (using that fine broth) &#8212; voila!<\/p>\n<p><img decoding=\"async\" style=\"width: 500px; height: 333px;\" alt=\"cooked haggis\" src=\"http:\/\/www.knitbot.org\/BlogHTML\/2011\/NotAwfulOffal\/IMG_4105-blog.jpg\" \/><\/p>\n<p>\nMy (completely non-authoritative) opinion:&nbsp; the texture really<br \/>\nworked, and I need to work on the spices.<\/p>\n<p>Of course,&nbsp;
